How does buying a quarter of half cow work?
How Our Beef Pricing Works
All of our cattle are processed at a USDA-inspected facility, ensuring the highest standards of quality and safety.
After harvest, the carcass is weighed once the hide, head, and internal organs have been removed. This is called the hanging weight (or hot carcass weight) and is the standard used to price bulk beef.
We charge $7.50 per pound based on hanging weight, which includes standard processing, cutting, and packaging.
What to Expect
Hanging weight is not the same as the final amount of beef you take home. During processing, weight is reduced due to trimming, deboning, and your individual cut selections.
As a general guideline, customers can expect to receive approximately 60% of the hanging weight in packaged beef, depending on:

For example, a quarter beef with a hanging weight of 125 pounds (whole Dexter hanging weight averages 500lb) would typically yield about 75-80 pounds of packaged beef. Price is calculated at 125lbs x 7.50/lb.
At $7.50 per pound, the total cost for a quarter Dexter would be $937.50 in this example.
Customers purchasing a half cow will receive a custom cut sheet to select how their beef is processed.
For quarter cows, standard processing cuts are applied.
Typical cuts include steaks, roasts, and ground beef.
Understanding Dexter Beef
Our cattle are Dexter, a heritage breed known for exceptional flavor, tenderness, and efficiency. Dexters are naturally smaller and more compact than commercial cattle, resulting in smaller overall yields—but a superior eating experience.

(Includes standard processing, cutting, and packaging. Specialty cuts may incur additional fees.)
We are happy to pick up and deliver your beef to you! The delivery is included for a 75 mile radius of Marion, SC. If delivery is needed outside of the standard delivery area, we charge an additional fee.
A $250 non-refundable deposit is required to reserve a quarter cow, and a $500 non-refundable deposit is required to reserve a half cow.
We do also occasionally offer custom boxes.
